Mushroom Biryani Recipe

Ingredients:
Rice – ½ Kg
Basmati
Oil – 3-4 tbsp
Vegetables:
Mushroom – 400 Gms
Onion – 3 medium size, thin slices
Tomato – 3 medium size, thin slices
Garlic – Paste
Ginger – Paste
Green Chilly – 3, slit (add more according to required spicy)
Spices:
Cloves – 4 Pieces
Cinnamon – 4 Pieces
Cardamom / Elachi – 3-4 Pieces
Black Cardamom / Elachi – 2 – 3 Pieces
Javitri – Small piece
Bay Leaves – 2 – 3 Pieces
Shahi Jeera – ½ tbsp
Chilli Powder (Kashmiri) – 1 ½
heaped tbsp
Turmeric – ½ tbsp
Gharam Masala – 1 tbsp
Salt –  To taste
Herbs:
Coriander (Dhania) –  As required
Mint (Pudina) – As required
Dairy:
Ghee – 4-5
tbsp  
Curd – 6 tbsp
Toppings:
Cashew – 10 pieces
Onion – 1 medium sized
Step 1
Pan or pressure cooker can be used to prepare the biriyani. 
Step 2
First add 4-5 tbsp of ghee to the pan or cooker and then add all the spices
– Cloves, Cinnamon, Cardamom / Elachi, Black Cardamom / Elachi,
Javitri, Bay Leaves, Shahi Jeera. 
Step 3
After 2-3 minutes of frying add sliced onions and then fry evenly till the
onion reaches golden brown.  
Step 4
Add ginger and garlic paste and fry till the raw smell goes off. Now add
slit chilly and fry for 2 minutes. 
Step 5
Add sliced tomatoes and fry it till its smashed.  
Step 6
Add turmeric powder, Kashmiri chilli powder and salt according to
taste.  
Step 7
Add ½ tumbler water and then boil it till it mixes well. 
Step 8
Add mushrooms to the pan. As the mushroom cooks add 6 tbsp curd to the pan.
Allow the gravy to cook well. 
Step 9
To the pan / cooker add basmati
rice and then pour water as required. 
Step 10
Add chopped Coriander and Mint to pan
/ cooker and then close the lid. 
Step 11
Wait for 2 whistles and then allow
the cooker to cool down. 
Step 12
Garnish the biryani with roasted
cashew and fried onions. 
Your yummy Mushroom Biryani is ready to serve!
Please Note: The gravy (before adding rice) can be served
as a side dish for roti / chapati. That is till step 8.
