Tomato Curry | Gravy Recipe For Dosa
Tomato kurma is simple South Indian tomato based gravy that goes well with south Indian dishes like Dosa, Idli, Uttapam and Paratha.

Ingredients:
Vegetables:
Onion – 2 medium sized,
finely chopped
Tomato – 3 medium sized,
finely chopped
Green Chillies – 2, slit
Curry Leaves – 3-4 leaves, finely chopped
Coriander – Finely chopped for garnishing
Garlic – 3 - 4 clove
Others:
Salt (White or Himalayan Pink) – To taste
Water – As required
Oil – For roasting
Flour:
Besan – 1 tbsp
Spices:
Cinnamon – 1 Piece
Cloves – 3-4 pieces
Chilly Powder – As required
Mustard Seeds – ½ tsp
Split Black Lentils / Urad Dal – ½ tsp
Split Chickpea / Chana Dal – ½ tsp
Method of Preparation: Gravy / Curry
Step 1
Pour oil in a pan and place it on a burner.
Step 2
Add cloves, cinnamon and garlic.
Step 3
Add mustard seeds, Urad Dal and Chana Dal to the pan.
Step 4
Stir it until it turns golden brown.
Step 5
Add chilli and onion.
Step 6
Saute on a medium flame until onion softens.
Step 7
Add tomatoes and cook it for 2-3 minutes until tomatoes turns soft and mushy.
Step 8
Add turmeric, salt and chilli powder as required.
Step 9
Now add besan mix (1 tbsp gram flour mixed with a cup of water). Mix quickly with the gravy and reduce the heat.
Step 10
Besan tends to become thick when cooked. Hence add water accordingly. The gravy should be of semi-thick consistency.
Step 11
After adding besan, stir the gravy quickly to avoid lump formation. Adjust the
thickness of gravy by adding some water.
Step 12
Garnish with some fresh coriander leaves and switch off the flame.
