Ingredients:
Garlic – 1 Cup
Pepper – As required
Asafoetida – 2 Pinch
Tamarind – Lemon size
Red Chilli – 4-5  
Curry Leaves – As required
Jaggery 1 Tsp
Dry Coconut –  ½ cup, grated
Salt – To taste
Ghee – 3 Tsp

Method of Preparation: Garlic Chutney Podi / Powder

Step 1
Add ghee, garlic cloves to the pan and sauté until it turn golden brown.

Step 2
Remove garlic from the pan and keep it aside.


Step 3
Saute pepper, red chilli and curry leaves in a pan until spice turns aromatic.  

Step 4
Cool the mixture completely.  

Step 5
Take a blender and add the spices, jaggery, dry coconut, tamarind, salt and asafoetida to it.


Step 6
Blend to a coarse powder without adding water.


Step 7
Adjust spice and salt according to taste.

Note:
Preparation: Roast each ingredient separately.
Storing: You can store the chutney powder in a air tight container for a week (7 Days) or refrigerate it.
Alternate: You can replace red chilli with black pepper.
