How To Prepare Curry / Sabzi / Gojju with Karela | Bitter Gourd


Bitter Gourd or popularly known as Karela in India is one of the healthiest vegetables in the
food kingdom.  Bitter gourd is known by various names, including bitter melon, bitter squash,
bitter cucumber, bitter apple, or balsam pear. 

Biologists believe that the origins of Bitter Gourd were first found in Kerala and later
introduced to China in 14th century, making it a staple vegetable across cuisines in Southeast
Asian, South Asian and East Asian countries.

It is full of antioxidants, vitamins, and minerals. It can be eaten as a vegetable, a pickle or as a
juice. There are many benefits of regular consumption of bitter gourd.

Lets begin with the preparations:

Ingredients:
Bitter Gourd: 1 Medium sized, thinly sliced
Tamarind: In the lime size, soaked in water
Turmeric Powder – 1 Pinch
Salt – To taste
Sambar Powder – 2 Tbsp
White Sesame Seeds – 2 Tbsp

To Temper:
Mustard Seeds – ½ Tsp
Oil – 2 Tbsp
Curry Leaves – As required
 

Method of Preparation: Sesame Powder
Roast sesame seeds and grind it to make a powder.

Method of Preparation: Curry, Sabzi, Gojju

Step 1
Cut the bitter gourd into small pieces.  

Step 2
Heat the pan and then add oil as required.

Step 3
Add bitter gourd to the pan.

Step 4
Saute bitter gourd for 4-5 minutes until it gets softer.

Step 5
Keep the bitter gourd aside

Step 6
Take a pan add oil, mustard seeds and curry leaves.
Step 7
Add tamarind water, turmeric powder, sambar powder and jaggery to the pan.

Step 8
Allow it to boil for 3-5 minutes.
Step 9
Add
sesame powder to it and then add water to get correct consistency.
Step 10
Add fried bitter gourd to it and switch off the flame.


Your yummy Curry, Sabzi, Gojju is ready to serve!
