How To Make Akki Rotti | Rice Rotti | South Indian Food | Cuisine Of Karnataka

Akki rotti "rice bread" a popular breakfast item unique to the state of Karnataka, India.

It is served hot and is eaten along with chutney. A dash of butter or ghee with akki rotti is also preferred. Another way of making akki rotti is to spread the dough over a plantain leaf and then cook it over the griddle with the plantain leaf on the top.

Ingredients:

Vegetables:
Onion – 4 Medium Sized, finely chopped
Fresh Coconut – ½ Cup, grated
Coriander Leaves – ¼ Cup
Methi / Fenugreek 
Leaves – ¼ Cup
Cumin Seeds – 1 Tsp

Others:
Salt (White or Himalayan Pink) – To taste
Water – As required
Oil – For seasoning, marinating

Flour
Rice Flour – 2 Cups

Method of Preparation: Mixing

Step 1
Add Onion  – 4 Medium Sized, finely chopped;  Fresh Coconut  – ½ Cup, grated; Coriander
Leaves – ¼ Cup and Methi / 
Fenugreek Leaves – ¼ Cup to a large bowl.

Step 2
Add Rice Flour – 2 Cups, Cumin Seeds – 1 Tsp and Salt (White or Himalayan Pink) – to taste.

Step 3
Mix all the ingredients well.  

Step 4
Add water little by little to the dough.  
Note: Don’t add excess water and ensure you don’t add all the water at one go.

Step 5
The dough should be sticky and moist. It helps to spread easily on the tawa.
Step 6
Take a small portion of the dough and make medium sized round balls.  

Method of Preparation: Rotti On Tawa
Step 1
Take a pan and grease it with 1 Tsp of oil.
Step 2
Place the dough on the tawa and spread it evenly to get a thin layer.

Note:
Tawa needs to be cool before you spread the dough.
You can dip your hand in water or oil to spread the dough evenly.
Step 3
Keep the tawa on the burner. Flip the rotti around once you see the rotti cooked to light golden brown in colour.


Step 4

Add oil to the sides and cook till it gets crisp.
Note:
Allow the pan to cool completely or keep it under fresh water before you cook the next one.  
It needs to be consumed hot as it gets harder once it gets colder.  

Your yummy Akki Rotti is ready to serve!
